We have been searching for the best possible whole wheat bread recipe. After trying a few, this is our favorite. (Thank you, Tiffany!) It’s healthy and delicious, and even light. A house filled with the aroma of fresh baked bread is a house filled with love. Spoil your family with this treat. If you have school age children, time it to be done when they come running in the door. They are gonna be soooo happy.
Here it is: (I make it in my Bosch mixer, and grind the wheat in our Wonder Mill)
Water – 4 1/4 cups warm
Flour – about 11 or 12 cups, white wheat
Powdered milk – 9 TBSP (heaping 1/2 cup)
Yeast – 71/2 tsp.
Butter – 6 TBSP
Salt – 4 ½ tsp
Honey – 1 cup
Vital Gluten – 4 ½ TBSP
Dough Enhancer – 3 TBSP
Add 6 cups flour to the water, mix to a pancake-like batter consistency
Add yeast and two TBSP of the honey
Mix in well and let rise for 15 minutes
Then add pwd milk, yeast, honey, salt, butter, gluten
Mix on speed 1, then go to speed 2
Add additional flour until dough pulls away from sides of mixing bowl
Knead 7 – 8 minutes
Add Enhancer
Knead 2 min. more
Grease hands, form 4 loaves,
Put into greased pans or ungreased coated pans.
Let rise til double in size (about 45 min to an hour)
Put in cold oven, turn on 350 degrees
Bake for 30 – 35 minutes.
Turn out on rack immediately. Slice when cool.

Here’s one I’ve been using for years. 90 minutes from start to finish:
Whole Wheat Bread
In mixing bowl combine:
3 ½ c. whole wheat flour
1/3 c. wheat gluten
1 ½ T. yeast
Add: 2 ½ c. hot tap water (adjust as needed. I usually do 2 5/8 C)
Mix for one minute and cover. Let rest for 10 minutes.
Add the following and mix for 30 seconds:
1 T. Salt
1/3 c. oil
½ c. honey (or brown sugar)
1 ¼ T. lemon juice
Add:
2 ½ c. flour-1 cup at a time. (Bread needs to be a bit sticky, so adjust as needed. I usually do 3 C. It’s perfect if the dough comes clean from the edges of the bowl when mixing)
Knead for 10 minutes. Set oven to lowest temperature setting (usually 170). When oven reaches 170, turn it off. This will be your “warm oven”.
Turn dough into two bread pans. Let rise until double in a warm oven. Turn oven to 350 (while pans are still in oven) and bake for 30 minutes.
